Shredded Beef Tacos, Tostadas or Burritos

Ingredients :
- 3 lb chuck roast.
- Large onion sliced.
- 1 T. pepper.
- 1 bay leaf.
- 3 T. Pilarcita’s Mexican Seasoning (hot or original).
- Oil.
- Corn tortillas.
- lettuce cheese.
- tomatoes .


Preparation :
Place meat in large pot and cover with water. Add onion, pepper and bay leaf. Bring to a boil. Reduce heat and simmer covered for a couple of hours or until meat pulls apart easily with a fork. Remove meat from pot and let sit until cool enough to handle. Shred with fork. Add 2 tablespoons of oil to pot and heat over medium flame. Add shredded meat and the seasoning. Mix well. Stir until meat is warmed. Fill warmed taco shells with meat and top with lettuce cheese, tomatoes and of course your favorite hot sauce.

Note :
If you have any left over shredded beef this is a good recipe for breakfast.


Machaca

Ingredients :
- 2 T. Oil.
- 1 small bell pepper - chopped.
- 1 small onion - chopped.
- 1 large tomato - chopped.
- Shredded beef.
- About 4 to 6 eggs beaten.
- Additional Pilarcita’s Mexican Seasoning to taste .


Preparation :
Heat oil over medium flame until hot. Add chopped bell pepper and onion and sauté until soft. Stir in shredded beef and eggs. Cook until eggs are set and beef is warmed thoroughly. Stir in tomatoes. Serve with tortillas, beans and rice.

 

Ground Beef Tacos, tostadas or Burritos

Ingredients :
- 1 lb. ground beef.
- 2 T. Pilarcita’s Mexican Seasoning (hot or original).
- Corn or Flour tortillas.
- Lettuce.
- cheese.
- tomatoes .


Preparation :
Cook beef in a medium skillet over med-high heat for 4 to 5 minutes or until meat is no longer pink, drain grease. Stir in 2 T. seasoning, ˝ cup water, and bring to a boil. Reduce heat to low and cook stirring occasionally for additional 5 to 6 minutes. Use as filling for tacos, burritos or tostadas.

Note :
Cooked shredded chicken may be substituted for the beef.


Baby Back Ribs

Ingredients :
- 2 lbs. Baby back ribs.
- Pilarcita’s Mexican Seasoning (hot or original).
- Your favorite BBQ Sauce (We use Smoking Joe’s BBQ Sauce) .


Preparation :
Sprinkle Ribs liberally with Pilarcita’s Mexican Seasoning and rub in. Refrigerate one hour. Place in pan, cover with foil and bake for 1 hour at 350. Remove ribs from oven and slather on BBQ sauce according to preference. Back an additional 30 minutes. Remove from oven and enjoy.
